Our suppliers of Olive Oil have since 1890, been producing quality oil with a unique Southern Italian taste with commitment, passion and experience.

The quality is in some senses due to their technical equipment, their analyses and their control procedures, but the most important factor is their decades of knowhow. A passion for oil, handed down from generation to generation, from father to son, and which inevitably proved contagious for everyone in the company.

Our suppliers are from Fasano, midway between the cities of Bari and Brindisi, in a land that has always had a vocation for olive cultivation. Just-in-time production reduces inventory and leads to rapid stock turnover, ensuring outstanding product freshness and shelf life. The oil can be stored in over 50 in-ground stainless steel tanks (ranging in size from 10 to 500 tons) ensuring quality of produce is maintained.

Southern Italy's history is literally soaked in the aroma of olive which translates into presence of state of the art production houses, latest techniques and resultant variety of olive oil which is par excellence in all its glory Olives are a distinctive feature of the landscape in this region overlooking the Adriatic in the east and the Ionian Seam to southwest.

Miles and Miles of countryside are used exclusively for olive production, with the twisted trunks of olive trees emerging from the red earth and the silvery foliage shining against the blue sky. And this is where the farm is to be found, midway between the cities of Bari and Brindisi, in a land that has always had a vocation for olive cultivation.

It is a fascinating landscape, combining the undisputed beauty of the age-old trees with the hard work needed to cultivate them; indeed, this hard work is evident in the white dry-stone walls which separate the estates. The oils from this region are fruity and light Puglia's economy has always been inextricably bound to olive production. In fact, oil production is a real resource for the region, particularly the area around Bari. Authentic Mediterranean oil from Puglia is now enjoyed worldwide.

Production Process

New scientific discoveries have demonstrated that Extra Virgin Olive Oil needs a lot of attention, from the stages of olive cultivation and extraction in the mill, to storage and consumption. With the extraction of Olive Oil, a natural process of reduction of its taste and smell features and nutritional properties begins. It is therefore essential for Extra Virgin Olive Oil to be rich in flavour from extraction and for its natural aging process to be monitored.
