Crispy Malabar Spice Stuffed Idli

One of my absolute favourites for when my friends and family come over, this appetizer is a lovely start to any meal. All the most delicious flavours of South Indian food, made even better with the use of Olive Oil that keeps the dish healthy and yummy all at the same time! Make sure you make enough of it though because your fans are always going to be asking for more!

Ingredients

  • For the Idli Batter
  • Rice Semolina-1 cup
  • Beaten Rice ( poha)-1/4 cup
  • Urad Dal- 1/4 cup

For the stuffing

  • Mixed Vegetables- 2 Cup
  • Green Chillies- 2
  • Kadi Patta- 5-6
  • Urad Dal- 1/2 tsp
  • Mustard Seeds- 1/2 tsp
  • Sambhar Powder-1/2 tsp
  • Salt to taste

For Deep Frying

  • Leonardo Cook All Olive Oil

Method

  • Make Idli Batter (1 cup Semolina, 1/4 cup Beaten Rice, Poha 1/4 cup Urad Dal) and keep it overnight to ferment.
  • Chop mixed boiled Vegetables, including Carrots, Beans and Cauliflower.
  • In a pan, heat some Leonardo Extra Light Olive Oil and put the chopped vegetables.
  • Add mashed peas (mashed with hands) and stir.
  • In a separate pan for tempering, heat some Leonardo Extra Light Olive Oil.
  • When the oil is warm enough to be tempered, add Urad Dal first, followed with Onion Seeds, Mustard Seeds, Curry Leaves, some Sambhar Masala, Green Chilies and finely chopped dry Red Chillies and saute.
  • Transfer the tempering to the mixed vegetables pan.
  • For the Idlis, make a layer of some batter in the mould.
  • Now add vegetables mixture and top it with another layer of the idli batter. Idli would come out as stuffed with vegetables when done.
  • Steam the Idli moulds. When done, cut out the Idlis into batons.
  • Now deep fry all of them in a pan, filled with Leonardo Extra Light Olive Oil.
  • When the Idlis turn golden brown, take them out and place them on a tissue paper to get rid of the excess oil.
  • While plating, sprinkle the Idlis with some Chat Masala and Black Pepper.
  • Your healthy Snack for the day is ready to be relished!!!
