Healthy Oatmeal Cutlets

The name says it all- it's healthy and yummy all at the same time! This dish makes for a great little snack at almost any time of the day, be it morning, afternoon or evening. It can be prepared in no time, and brings with it an appetizing mix of a variety of spices. We recommend you serve it with some mint chutney and tea on a rainy evening without worrying about health

Ingredients

  • Oatmeal
  • Leonardo Just Lite Olive Oil
  • Crushed cornflake for coating
  • Boiled potatoes
  • Coriander, chopped
  • Boiled Rice
  • Mint
  • Ginger
  • Diced green and red capsicum
  • Grated carrot
  • Beans
  • Cornflour
  • Bread crumbs
  • Green Peas
  • Salt- to taste
  • Red chili powder
  • Chat masala
  • Lemon juice
  • Low Fat cottage cheese, grated

Method

  • Boil Oatmeal in ample water and keep it for some time till it reaches normal temperature.
  • Boil the potatoes till 3-4 whistles in a pressure cooker or microwave it for 5-6 mins. Peel the skin and when they are still warm mash the potatoes nicely.
  • Add chat masala, cumin powder, Garam masala, chat masala, ginger, mint leaves, salt, lemon juice, grated cottage cheese, grated carrot, diced green and red capsicum, grated peas and chopped green chilies, coriander to the mashed potato mixture and mix it nicely.
  • Now add oatmeal and boiled rice to the potato mixture and mix it nicely.
  • Divide the mixture into 12-14 equal portions and shape them into rounds of 2" diameter and 1/2" thickness. Make all the cutlets and keep them ready.
  • In a plate spread crushed corn-flakes or bread crumps and coat cutlets with it.
  • In a wide nonstick pan heat 2-3 tbsp Leonardo Just Lite Olive oil and place the cutlets and shallow-fry them on low- medium flame until they are roasted to light golden brown in color. Turn them and add a tbsp of oil from the sides if needed and roast until crisp on both sides. Drain oil by placing them on a kitchen napkin.
  • Hot healthy crispy oatmeal cutlets are ready to be served.
  • Enjoy it with green chutney.
