My go-to recipe for dessert when I have less time and more appetites to satisfy! This homemade cake is light and spongy and has subtle flavours that can be accentuated with your choice of icing. You'll just need your basic baking ingredients and the enthusiasm every baker needs to excel, and in no time, you'll have a delicious dessert to serve your friends and family!

Ingredients

  • Leonardo Just Lite Olive Oil-1 Cup
  • All-purpose flour-3/4 Cup
  • Milk- 1 Cup
  • Sugar-1 Cup
  • Milk Powder- 1 Cup
  • Vanilla Essence- 2 Tsp
  • Lemon Juice-1 Tsp
  • Baking Powder-1/3 Tsp
  • Soda- 2 Pinch
  • Salt- 2 Pinch

Method

  • Boil the milk and add sugar into it.
  • Put Leonardo Just Lite Olive Oil in bowl of Milk and mix well. Let the mixture cool down to room temperature.
  • Once the mix is colder, add all purpose Flour, Milk Powder, Baking Powder, Soda and Salt.
  • Mix everything slowly and well.
  • Now add Vanilla Essence and Lemon Juice and mix it for about 5-10 minutes and make sure that the entire mix has an even texture. This mixing is a key process for the cake to get good shape and sponge.
  • After this mixing, batter is ready to be baked.
  • Take an aluminum bowl (cake pan) and grease the surface & inner walls with Leonardo Just Lite Olive Oil. Now fill the batter into the cake pan and shake the pan so that batter spreads evenly across pan.
  • Gas Oven: Preheat the gas oven for 5 minutes and place the cake pan inside oven and bake it for about 20-25 minutes on seam heat. OR Microwave: Preheat the microwave on convection and bake it at 180 degree for 45 minutes.
  • If baked in gas oven then check the status of cake, if it has risen well and you don't see the top of the cake as wet batter, then turn the gas off and leave the cake inside gas oven for another 30 minutes.
  • If baked in Microwave then, take out the cake when it's ready(Optional: Take out the cake from oven and cover the pan with a plate, hold the pan firmly covered with a plate and flip the sides to get the cake in the plate.)
  • Decorate the cake with your choice of icing.
  • Now enjoy this healthy & delicious cake in the company of your friends and family!
