Extra Virgin Olive Oil

A make-as-you-go dish that is super fun to eat and irresistible to put down. Packed with fresh herb flavours and the cheesy goodness of mozzarella, this makes for an incredible addition to any menu for the evening. Add some bread for some texture and some salt to taste and satiate appetites table-round!

Ingredients

  • 400 g of buffalo mozzarella
  • 12 thick slices of tomatoes
  • 8 spoonfuls of extra-virgin olive oil
  • 12 fresh basil leaves
  • A handful of black or green olives
  • Toasted bread slices as an accompaniment
  • Fresh oregano (or dried if no fresh available)
  • Salt to taste

Method

  • On each of the 4 plates, lay out 3 slices of tomato, each with a slice of mozzarella and 3 basil leaves on top. Sprinkle the oregano and salt on top and garnish the plate with the olives. Just before serving, drizzle oil on top and serve with the toasted bread kept warm in a napkin.
