Pan Tossed Vegetable Achar

Not only is homemade achar much healthier than its store bought counterpart, it's also much more flavourful! It's a condiment that can be used to add flavour to almost any dish, be it a steaming plate of rajma chawal or even palak sabzi with dal. It can be preserved for a number of weeks and is the ideal vegetable based topping for any Indian meal.

Ingredients

  • Onion Seeds ( kalonji)- 3 tbsp
  • Vinegar-1/4 cup
  • Leonardo Just Lite Olive Oil- 1 Liter
  • Carrots- 4-5
  • Cauliflower-1 medium
  • Radish-3-4
  • French Beans-250 gms
  • Lemons-10-12
  • Gooseberry (Amla)-20-22
  • Red and green chilies- 250 gms
  • Garlic- 2whole
  • Ginger- 250 gms
  • Mustard Powder-4 cups
  • Salt-3 1/2 cups
  • Amchur Powder- 100 gms
  • Saunf Seeds Powder-100 gms
  • Turmeric Powder-2 tbsp
  • Asafoetida ( hing)-1/2 tbsp

Method

  • In a bowl, chop some French beans, Radish, Carrot and Cauliflower into small pieces.
  • Add finely chopped Ginger and softly mashed Garlic.
  • Now add finely sliced Red Chilies for the aroma and chopped Green Chillies into the mixture.
  • It's time to pour in some Leonardo Just Lite Olive oil and lemon wedges.
  • In a separate bowl, put Mustard Powder in good quantity, Turmeric Powder, Onion seeds (Kalonji), Dried Mango powder (amchur), Fennel (saunf) powder and Asafoetida (hing).
  • Now add some Leonardo Just Lite Olive Oil to mix all the masalas together along with a lot of salt in it.
  • Add this whole mixture of spices in the vegetables.
  • In the end, pour some Vinegar.
  • Preserve the Achar in a glass jar, tightly closed and let it dry under the Sun for at least 4 days.
