Boil the potatoes and peas in water and while this happens, finely chop green chillies and ginger. Add 20 gms oil in a pan and when oil gets warm, put 2 gms hing and the chopped green chillies and ginger. Also add the boiled peas, potatoes and a few drops of lemon juice.
Add the rest of the dry ingredients and mix well. Your samosa filling is ready.
For coloured maida, add beetroot for red colour and palak for a green colour. Knead the maidaand roll out small rotis from it. Add the samosa masala in the rotis and using your fingers, press the maida into the shape of a samosa.
