Refried Warm Salad with Sweet Potato & Rajma

This warm salad is low on calories, quick to prepare and loaded with flavors. Enjoy it as a hearty meal in itself or as an appetizer on your dinner table. It brings with it a variety of textures, tastes and aromas, and is a simple must know dish for every home cook!

Ingredients

  • Sweet Potatoes
  • Onions
  • Green Chilli
  • Salt
  • Pepper
  • Lemon Juice
  • Fresh Coriander
  • Lettuce
  • Leonardo Just Lite Olive Oil
  • Rajma
  • Mexican Seasoning
  • Mexican Salsa
  • Onion Seeds
  • Baked Nachos
  • Cherry Tomatoes
  • Olives
  • Leonardo Extra Virgin Oil

Method

  • In a pan, put some Leonardo Just Lite Olive Oil to heat.
  • Add some finely chopped Onions, Green Chillies and saute.
  • Now add some boiled Sweet Potatoes, cut in small pieces with some steamed Rajma.
  • Add some Mexican seasoning, saute and toss.
  • Once it's done, add some Mexican Salsa (Made of tomato puree, lemon juice, coriander and green chilies).
  • Twirl the mixture a bit and let the consistency be on the dry side and not wet.
  • Now put some freshly chopped Coriander leaves, Onion seeds, a little bit of Salt and freshly ground Black Pepper and stir well.
  • Switch off the burner and add crushed baked Nachos, Lettuce (break the Lettuce leaves with hands), Cherry Tomatoes (cut in halves), sliced Olives and mix well.
  • In the end, add some Leonardo Extra Virgin Oil.
  • Sprinkle the dish with Salt and Black Pepper. And the dish is ready to be enjoyed!
