Strawberry Cake

One of the most popular continental desserts amongst Indian cooks, this strawberry cake is the perfect way to top off any meal, on any occasion. Not only does it come packed with flavour - fresh, juicy strawberry and cream- it has all the lip smacking tastiness that comes only baked goods! A treat for all your senses!

Dry Ingredients

  • Water-200 ml
  • Eggless mayonnaise- 20 gms
  • Leonardo Just Lite Olive Oil- 500 ml
  • Sugar- 170 gms
  • Flour- 140 gms
  • Salt- 4 gms
  • Baking soda- 4 gms
  • Strawberry essence- 4-5 drops

Ingredients for butter cream

  • Whole eggs- 50 gm
  • Sugar- 50 gms
  • White Butter- 150 gms
  • Strawberry essence
  • Light pink colour

Method

  • Preheat the oven to 180 degrees.
  • Sift all the dry ingredients together.
  • Mix all liquids to them.
  • And keep mixing until a smooth batter is obtained.
  • Fill in the molds and bake for 30 mins.
  • Till an inserted wooden tooth pick/knife comes out clean.

Method of making butter cream on a double boiler

  • Place the eggs and sugar in a bowl and whisk over the double boiler till they are very warm and the sugar is fully dissolved.
  • Remove and keep whisking till the eggs are fully fluffy and on room temperature.
  • Add now the butter, strawberry essence and pink color.
  • Keep whisking till all butter is incorporated and cream is light and fluffy.
